Ingredients
  

  • 1 15 oz can of chickpeas, drained and rinsed
  • 1/4 cup fresh lemon juice
  • 1/4 cup tahini
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2-3 tablespoons water, if needed

Instructions
 

  • Prepare the chickpeas: Drain and rinse the canned chickpeas. For ultra-smooth hummus, consider removing the skins.
  • Blend the base: In your food processor, combine lemon juice, tahini, and minced garlic. Process for about 1 minute, scraping down the sides halfway through.
  • Add chickpeas and seasonings: Add the chickpeas, olive oil, cumin, and a pinch of salt to the food processor. Blend for 1-2 minutes until smooth.
  • Adjust consistency: If the hummus is too thick, add water, one tablespoon at a time, while the food processor is running until you reach your desired consistency.
  • Taste and adjust: Sample your hummus and adjust seasoning as needed. Add more salt, lemon juice, or cumin to suit your taste.
  • Serve: Transfer to a serving bowl, drizzle with olive oil, and garnish with paprika, chopped parsley, or pine nuts if desired.

Notes

For a smoother texture, remove the chickpea skins before blending. Hummus will keep in an airtight container in the refrigerator for up to one week.
